Our Process
Every product in our case was baked today. We start at 4 AM so that when you walk in, the laminated dough is still warm, the sourdough has its first-crack crust, and the tarts are finished just before we open.
48 layers of butter and dough, folded three times over two days.
Our sourdough levain develops over 48 hours for depth and structure.
Throughout the morning, so nothing sits past its prime.
